Olive Paste

Olive paste makes a delicious spread for sandwiches, dip for vegetable sticks or as a spread on crisp bread.

Ingredients (Serves 4)

  • 375g jar pitted Kalamata olives, drained
  • 1 tablespoon thyme, oregano or rosemary, chopped
  • 1 garlic clove, crushed
  • juice of 1 lemon
  • 1/2 fresh chilli, seeds removed and chopped (optional)pepper


  1. Put all ingredients in food processor and blend for about 30 seconds.
  2. Store in fridge in an airtight container.
