This dip doubles up as a delicious salad dressing. You might like to put it through the food processor to give it a smooth consistency.
Ingredients (Serves 4)
- 1 large beetroot, peeled and grated
- 1/2 cup natural yoghurt
- 1 clove garlic, crushed
- 1 tablespoon olive oil
- 1 tablespoon vinegar
- salt and pepper
Method
- Place beetroot in a bowl with olive oil, vinegar, salt and pepper. Mix well.
- Mix yoghurt with crushed garlic.
- Combine dressed beetroot and garlic yoghurt. Mix well.
