Baked Eggs, Fetta, Spinach and Tomato Breakfast

Have you recently been to see a particular naturopath and been told to go on a low starch diet and eat protein for breakfast? Are you mystified as to what is going to replace your fruit loops? Well, this easy, delicious and nutritious breakfast solves your problem.

  1. Preheat oven to 180C.
  2. Pour a slurp of extra virgin olive oil into a small ovenproof dish.
  3. Top with thickly sliced tomato, followed by a layer of baby spinach leaves, followed by a slice of goat’s chèvre (or moist fetta) and one or two organic eggs.
  4. Add a little salt and pepper, bake for around 15 minutes or until whites are set.
