Banana Pancake

High protein, no grain breakfast or snack. This dish is simplicity itself.

Ingredients (Serves 1)

  • 1 small banana
  • 1 organic egg
  • 1 teaspoon butter
  • (optional) ½ teaspoon ground cinnamon, desiccated or shaved coconut, berries, yoghurt


  1. In a bowl, mash banana with a fork until smooth.
  2. Add 1 whole egg, whisk together.
  3. Add cinnamon, coconut if desired
  4. Heat small frypan, when hot add teaspoon butter
  5. When butter has melted, add batter.
  6. Wait (patiently) until edges turn brown
  7. Slide out of pan, onto plate. Add yoghurt and berries if desired.
