Sardines and Tomatoes on Toast

A simple, easy and nutritious meal for breakfast, lunch or even a rushed dinner.

Ingredients (Serves 4)

  • 4x105g can sardines, drained well
  • 4 tomatoes sliced
  • 2 tablespoons chopped fresh dill
  • 8 slices mixed grain bread, toasted
  • lemon wedges
  • sea salt and pepper

Method

  1. Place slices of tomato on toast, sprinkle with sea salt.
  2. Place sardines on tomatoes, sprinkle with pepper, dill and squeeze of lemon juice.
