Marlin Steaks with Green Beans, Pesto and Roast Tomatoes

Kids usually eat vegetables if they have other flavours such as garlic, salt, soy sauce added to them. Pesto is a good choice for flavouring vegetables.

Ingredients (Serves 4)

  • 4 marlin steaks
  • 400g green beans, topped and tailed
  • 8 roast tomato halves (see recipe on this website)
  • 4 teaspoons pesto (see recipe on this website)
  • juice of 1 lemon mixed with 1 tablespoon of olive oil
  • sea salt and pepper

Method

  1. Brush marlin steaks with oil and lemon juice mixture, cook under a hot grill (I prefer a skillet) for 2 minutes. Turn over, brush with oil and lemon juice again and continue cooking, probably another 2 minutes. Be careful not to overcook the fish. As soon as the flesh turns white remove it from the heat.
  2. Microwave or steam the beans, toss with pesto and portion on to 4 dinner plates.
  3. Place a marlin steak next to the beans, on each plate. Season to taste. Serve with roast tomato halves on the side.
