Egg & Lettuce ‘Sandwich’

The crisp cool of the lettuce is a wonderful contrast to the warm comfort of the boiled googs.

Ingredients (Serves 1)

  • 2 large organic eggs, hard boiled* and shelled, still warm
  • 1 tablespoon butter
  • salt and pepper
  • 2-3 outer leaves of iceberg lettuce, rinsed and dried


  1. In a bowl, roughly chop warm hard boiled eggs together with butter and salt and pepper.
  2. Add to lettuce leaves.
  3. Wrap into a bundle.
  4. Eat immediately.

To hard boil eggs, bring a pan of water to the boil, then gently add eggs, leave on the boil for 10 minutes. Remove, and peel in a bowl of cool water, the shell with come off cleanly
