Chick Pea and Tahini Dip
Good as a dip with pita bread, vegetable sticks; as a spread on sandwiches; as an accompaniment to grilled fish and meat; as a salad dressing.
Ingredients (Serves 4)
- 400g can chick peas, rinsed and drained
- 1 tablespoon tahini
- 1 tablespoon olive oil
- 2 cloves garlic, crushed
- juice of 1 lemon
- 1/4 cup cold water
- salt and pepper
- Place chick peas, tahini, olive oil, lemon juice, garlic salt and pepper in food processor. Whiz for 15 seconds.
- Stop processor, scrape down the sides. Turn processor on again and start pouring cold water through the hole in the lid. Process until a smooth consistency
is achieved. If too thick, add a little more cold water. Store in an airtight container in the fridge.
