Broccoli – Turning Presidential Humiliation into Triumph

That green knobbly unassuming vegetable, broccoli, soared to fame in 1990, when George Bush Snr banned it from Airforce One, saying “I haven’t liked it since I was a little kid… I’m the President of the United States, and I’m not going to eat any more broccoli”

Broccoli’s response to such a brutal attack was genius. The Friends’ of Broccoli gathered together and conducted research into the marvellous benefits of their little green pal.

Many of the Friends’ of Broccoli studies concentrated on Sulforaphane, a chemical found in broccoli, and found it helps prevent cancer, is anti-inflammatory, antioxidant and assists in detoxification, specifically in Phase 2 detoxification which takes place in the liver.

From being a food despised by a president, within a few short years, broccoli’s star was, and is still rising. Anti cancer, master detoxifier and full of fibre, broccoli is back, and here to stay.

Ingredients

  • 1 garlic clove
  • 250g broccoli (cut into florets)
  • 150g cauliflower (cut into florets)
  • 150g leek (white part, roughly sliced)
  • 500g chicken broth or stock (vegetable for veg option)
  • 60g ghee/butter or coconut oil
  • 1tsp sea salt
  • Pepper to taste
  • 2 egg yolks

 

Method

1) Chop garlic and place in large saucepan with vegetables and all other ingredients except egg yolks.

2) Simmer for 20mins.

3) Cool slightly add egg yolks and blend until smooth with a stick blender or food processor.

4) Add extra seasoning if needed and a drizzle of olive oil.
