Beetroot and Yoghurt Dip

This dip doubles up as a delicious salad dressing. You might like to put it through the food processor to give it a smooth consistency.

Ingredients (Serves 4)

  • 1 large beetroot, peeled and grated
  • 1/2 cup natural yoghurt
  • 1 clove garlic, crushed
  • 1 tablespoon olive oil
  • 1 tablespoon vinegar
  • salt and pepper


  1. Place beetroot in a bowl with olive oil, vinegar, salt and pepper. Mix well.
  2. Mix yoghurt with crushed garlic.
  3. Combine dressed beetroot and garlic yoghurt. Mix well.
