Toasted English Muffin with Cottage Cheese, Tomato and Avocado
This breakfast qualifies as ‘breakfast on the run’ but it still provides all nutrients your family needs for the morning.
Ingredients (Serves 4)
- 4 multigrain English muffins, cut in half
- 4 tablespoon cottage cheese
- 4 egg tomatoes, sliced
- 2 avocados sliced
- sea salt and pepper
- squeeze of lemon juice
Method
- Toast the muffins.
- Spread both halves with cottage cheese, top with tomato slices and then avocado slices.
- Season to taste with salt and pepper and a squeeze of lemon juice.
