This breakfast qualifies as 'breakfast on the run' but it still provides all nutrients your family needs for the morning.
Ingredients (Serves 4)
- 4 multigrain English muffins, cut in half
- 4 tablespoon cottage cheese
- 4 egg tomatoes, sliced
- 2 avocados sliced
- sea salt and pepper
- squeeze of lemon juice
- Toast the muffins.
- Spread both halves with cottage cheese, top with tomato slices and then avocado slices.
- Season to taste with salt and pepper and a squeeze of lemon juice.
