Healthy Eating: Easy Broccolini, Spinach & Rocket Salad Recipe

Broccolini Spinach Rocket Salad with balsamic dressing

This Broccolini Spinach Rocket Salad by Adam Liaw is a flavourful, nutrient-packed dish that’s easy to prepare.

Adding green vegetables to your diet is always a nutritional win, especially when they come from the Brassica family. This powerhouse group includes broccoli, cabbage, Brussels sprouts, cauliflower, and, in this case, rocket and broccolini. So, why do brassicas have every naturopath swooning? It’s because they’re not only rich in fibre, calcium, and iron, but they also contain unique compounds that aid in detoxification and have cancer-preventative properties1. These veggies truly pack a punch when it comes to supporting your overall health.

Ingredients (Serves 2-4)

    • 1 bunch broccolini
    • 1 tbsp extra virgin olive oil
    •  Salt and pepper, to taste
    • 120g mixed baby spinach and rocket leaves

Dressing

    • 2 tbsp extra virgin olive oil
    • 1 tbsp balsamic vinegar
    • 1 tbsp Dijon mustard
    • Juice of ¼ lemon, plus a lemon wedge for serving

Method

    1. Preheat a barbecue or grill pan over high heat. Toss the broccolini with olive oil and season with salt and pepper. Grill for around 6 minutes, turning occasionally, until nicely charred. Remove and chop into 2-centimetre pieces.
    2. Whisk the dressing ingredients together. Roughly chop the baby spinach and rocket leaves. Pour the dressing over and gently squeeze the leaves to wilt them slightly. Add the broccolini, toss everything together, and serve with a lemon wedge.

Serve this broccolini salad with your choice of protein – grilled chicken, lamb, beef, salmon, or tofu for a balanced meal.
