High protein, no grain breakfast or snack. This dish is simplicity itself.
Ingredients (Serves 1)
- 1 small banana
- 1 organic egg
- 1 teaspoon butter
- (optional) ½ teaspoon ground cinnamon, desiccated or shaved coconut, berries, yoghurt
- In a bowl, mash banana with a fork until smooth.
- Add 1 whole egg, whisk together.
- Add cinnamon, coconut if desired
- Heat small frypan, when hot add teaspoon butter
- When butter has melted, add batter.
- Wait (patiently) until edges turn brown
- Slide out of pan, onto plate. Add yoghurt and berries if desired.
